A raw giant carp is a quest item used only in Fishing Contest. It requires Level 10 Fishing and is caught with a fishing rod and red vine worms after stuffing the pipe with a garlic. Catching one gives no Fishing experience. It can be cooked into a giant carp, but this gives no Cooking experience.
It is given to Bonzo in order to win the Fishing trophy. After receiving the fishing trophy, more fish can no longer be caught.
Bonzo will take all copies of raw giant carp in the player's inventory. That said, if you catch two you can put one on the ground, give the "winning fish" to Bonzo, and then pick up the other raw giant carp after you get the trophy.
